Habanero Carrot Citrus (Hot, Caribbean-ish)
A glaze — reduce 1/2 cup sauce with 1 tbsp butter to lacquer grilled wings or pork.

- 8 habaneros (80–100 g; seed some to tame), stems off
- 1 cup sliced carrots (≈120 g)
- 0.5 onion
- 4 garlic cloves
- 0.8 cup apple cider vinegar (180 ml)
- 0.5 cup orange or pineapple juice (120 ml)
- 1 tsp kosher salt
- 1 tsp sugar
- 0.5 tsp turmeric
- 1 tsp yellow mustard or 1/2 tsp dry mustard (optional)

Simmer carrots, onion, and garlic in vinegar and juice for 10 minutes.

Add habaneros; simmer 3–4 minutes more.

Blend until glossy; adjust salt and sugar, then bottle.

Add 1 tsp grated fresh ginger for extra zip.

Pineapple juice makes it brighter; orange juice makes it rounder.
