  • 1 small whole white cabbage
  • 2 tbsp butter
  • 0.5 lb ground pork
  • 0.5 lb ground beef chuck
  • 1 cup chopped onions
  • 2 cup cooked long-grain white rice
  • 1 egg
  • 1 tsp finely chopped parsley leaves
  • 2 tbsp butter (for sauce)
  • 2 tbsp flour
  • 1 cup peeled, seeded, and chopped tomatoes
  • 1 tsp chopped garlic
  • 1 cup chicken stock
  • 0.5 tsp dried thyme

Instructions

    Cut cabbage in half lengthwise, remove core, and boil in salted water for 20 minutes until tender. Cool and separate into individual leaves (8 whole leaves needed).

    In a sauté pan over medium heat, melt butter. Add the pork and beef, cook until browned. Add onions and cook until soft. Transfer to a bowl.

    Combine the meat mixture with the rice, egg, parsley, salt, and pepper.

    Place filling in the center of each cabbage leaf, fold in sides, and roll tightly. Arrange seam-side down in a baking dish.

    For the sauce: melt butter, whisk in flour, then add tomatoes, garlic, chicken stock, and thyme. Season and simmer 10 minutes. Pour over cabbage rolls.

    Bake covered at 375°F for 45 minutes until tender.
