Fresh Mango Ice Cream

Creamy tropical mango ice cream with fruit relish.

  • 2 cup Fresh mango puree
  • 1 cup Heavy cream
  • 0.5 cup Whole milk
  • 4 each Egg yolks
  • 0.3 cup Sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Lime juice
  • 2 cup Mixed tropical fruits

Instructions

    Heat cream and milk together.

    Whisk egg yolks with sugar until pale.

    Slowly pour hot cream into yolks while whisking.

    Return to pan and cook over low heat, stirring constantly.

    Cook until mixture coats the back of a spoon.

    Remove from heat and cool to room temperature.

    Fold in mango puree, vanilla, and lime juice.

    Churn in ice cream maker.

    Freeze until firm.

    Serve with mixed tropical fruit relish.
