Jamie Oliver's Beef Stroganoff

- 4 fillet steaks (6 oz / 175g each)
- 1 tbsp all-purpose flour
- 1 tbsp smoked paprika
- 3 tbsp olive oil
- 2 tbsp butter
- 1 red onion, peeled and chopped
- 2 cloves garlic, peeled and chopped
- 2 sprig fresh thyme leaves
- 4 0.4 oz oyster mushrooms
- 4 0.2 oz shiitake mushrooms
- 3 tbsp brandy
- 8 0.5 fl oz fresh soured cream
- 1 gherkin, chopped
- 1 tsp sea salt and black pepper to taste

Dust the steaks with flour and smoked paprika on both sides.

Heat a large pan with half the olive oil and butter. When the butter is foaming, sear the steaks 2 minutes per side for medium-rare. Remove to a plate and set aside.

Add the remaining oil and butter to the pan. Gently fry the onion, garlic, thyme and mushrooms for 4 minutes until softened.

Add brandy to the pan and simmer for 3 minutes, letting the alcohol cook off.

Add the soured cream and chopped gherkin. Return the steaks to the pan. Heat through and season with salt and pepper.

Slice each steak thinly and spoon the sauce over. Serve with rice and green beans.
