Japanese Fried Rice

- 1 cup long-grain white rice, uncooked
- 5 tbsp butter
- 1 cup chopped onion
- 1 cup chopped carrots
- 0.7 cup chopped scallions
- 3 tbsp sesame seeds
- 5 eggs
- 5 tbsp soy sauce
- 0.5 tsp salt
- 0.3 tsp black pepper

Cook rice according to package directions.

Spread sesame seeds on a shallow pan. Bake at 350°F (175°C) for 10–15 minutes, shaking occasionally, until golden. Set aside.

Melt butter in a large skillet over medium heat. Add onions, carrots, and scallions; sauté until carrots are tender and translucent. Remove to a bowl.

Lightly grease the same skillet. Beat eggs; pour in and scramble until just cooked.

Combine cooked rice, sautéed vegetables, toasted sesame seeds, and scrambled eggs in the skillet. Add soy sauce and toss together.

Season with salt and pepper. Serve immediately as a side.
