  • 1 cup flour
  • 2 tbsp sugar
  • 3 tsp baking powder
  • 2 beaten eggs
  • 8
  • ½ tsp salt
  • ¼ cup cold unsalted butter, sliced into pieces
  • ½ cup currants or raisins
  • ½ cup cream

Instructions

    Add cream and vanilla extract, stirring with a fork just until combined.

    Shape dough into a ball.

    On a lightly floured surface, knead 4 to 5 times or until smooth and elastic.

    Roll dough to a 1-inch thickness.

    Brush the tops of the scones with a beaten egg.

    Place half a glace cherry between the lines of the scones that you just scored.

    Bake for 10 to 15 minutes until well risen and golden brown.

    Scoop onto a wire rack to cool.
