  • 8 cup beef or vegetable stock
  • 2 eggs
  • 6 tbsp grated pecorino cheese
  • 0.5 tsp freshly ground black pepper
  • 0.5 lb fresh mozzarella cheese, sliced
  • 4 tsp finely chopped fresh parsley
  • 12 piece flatbread or parchment bread (Carta Musica), broken into pieces

Instructions

    Place stock in a saucepan over medium heat and bring to a boil.

    In a small bowl, whisk eggs with pecorino cheese. Season with black pepper.

    Whisk the egg-cheese mixture into the boiling stock. Cook 1 minute, whisking constantly.

    Add mozzarella and parsley. Whisk well until cheese begins to melt.

    Place 2–3 pieces of flatbread into each shallow bowl. Ladle the hot soup over the bread and serve immediately.
