Zucchini Slaw

- 6 medium zucchini, grated (about 1.5 lbs)
- 2 tsp salt
- 1 large carrot, grated
- 1 large sweet red pepper, julienned
- 1 medium red onion, thinly sliced
- 1 stalk celery, julienned
- 2 tbsp each chopped fresh dill and parsley
- 0.8 cup mayonnaise
- 2 tbsp Dijon mustard
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tsp horseradish
- 0.3 tsp pepper

Combine grated zucchini and salt; toss well. Place in a colander and let stand 30 minutes. Rinse under cold water; drain and squeeze out excess moisture.

Place zucchini in a large bowl and add grated carrot, julienned red pepper, onion, and celery. Toss well.

Sprinkle with parsley and dill.

Combine mayonnaise, mustard, red wine vinegar, olive oil, honey, horseradish, and pepper. Stir into zucchini mixture.

Taste and adjust seasoning. Refrigerate until serving.
