Zucchini Marmalade

  • 8 cup shredded zucchini
  • 2 each lemons
  • 2 each oranges
  • 7 cup granulated sugar
  • 1 each box lemon or orange Jell-O

Instructions

    Grate rind of both lemons (not the white of the rind!).

    Slice oranges thinly.

  3. 3

    Cook zucchini, lemon rinds and oranges together 30 minutes, then add sugar and stir.

    Leave overnight, then cook another 30 minutes until clear.

    Add Jell-O powder and stir well.

  6. 6

    Put into sterilized jars and seal.

  7. 7

    Yield: 6 pints.
