Zucchini Casserole

  • 6 zucchini, sliced
  • 2 eggs, beaten
  • 1 cup mayonnaise
  • 1 small onion, diced
  • 1 cup grated Romano cheese
  • 0.3 tsp black pepper
  • 24 buttery round crackers, crushed
  • 2 tbsp butter, diced

Instructions

    Preheat oven to 350°F. Spray a 9×13-inch pan with cooking spray.

    Boil sliced zucchini until barely tender, about 2 minutes. Drain and set aside.

    Whisk together eggs and mayonnaise until smooth. Stir in onion, Romano cheese, and pepper.

    Fold in zucchini. Pour mixture into prepared pan.

    Sprinkle with crushed crackers and dot with diced butter.
