Yogurt Potato Salad

  • 0.8 cup plain yogurt
  • 0.3 cup low-fat mayonnaise
  • 2 tsp prepared mustard
  • 2 tsp prepared horseradish
  • 4 cup cubed cooked potatoes
  • 1 medium cucumber, seeded and cubed
  • 0.5 cup sliced celery
  • 0.3 cup chopped onion
  • 1 tbsp chopped green onion tops

Instructions

    Combine yogurt, mayonnaise, mustard, and horseradish in a large mixing bowl.

    Add potatoes, cucumber, celery, onion, and green onion tops. Mix well.

    Chill for at least 2 hours before serving.
