Yam Coconut Casserole

  • 1 lb yams or sweet potatoes
  • 0.5 cup unsalted butter
  • 0.5 cup cream of coconut
  • 0.3 cup heavy cream
  • 3 egg yolks
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.3 tsp salt
  • 24 large marshmallows
  • 1 pinch ground cinnamon for topping

Instructions

    Boil yams until tender. Peel while hot.

    Place in a mixing bowl with butter, cream of coconut, heavy cream, egg yolks, cinnamon, nutmeg, and salt. Whip until smooth.

    Spread into a casserole dish. Press marshmallows into the mixture so they are half-submerged.

    Sprinkle lightly with cinnamon.

    Bake in a preheated 350°F oven for 30 minutes until marshmallows are melted and golden.
