Winter Fruit Salad

  • 1 1/3 cup quinoa, rinsed
  • 1 0.5 cup water
  • 2 kumquats kumquats, halved, seeded and chopped
  • 2 tbsp chopped fresh cilantro
  • 0.3 cup olive oil
  • 2 0.5 tbsp fresh lemon juice
  • 0.5 tsp kosher salt
  • 1 large Bosc pear, peeled, cored and chopped
  • 1 medium cucumber, peeled, seeded and chopped
  • 1 cup watercress, trimmed and chopped

Instructions

    In a medium saucepan, combine quinoa and water and bring to a boil. Simmer over low heat, stirring often, until tender, about 12 minutes. Drain and cool completely.

    In a small bowl, combine kumquats, cilantro, olive oil, lemon juice, and salt. Allow to steep for 5 minutes.

    In a large bowl, combine the cooled quinoa, pear, and cucumber.

    Add the dressing and toss well.

    Add the watercress and toss again. Serve.
