Winter Fruit Salad

- 1 1/3 cup quinoa, rinsed
- 1 0.5 cup water
- 2 kumquats kumquats, halved, seeded and chopped
- 2 tbsp chopped fresh cilantro
- 0.3 cup olive oil
- 2 0.5 tbsp fresh lemon juice
- 0.5 tsp kosher salt
- 1 large Bosc pear, peeled, cored and chopped
- 1 medium cucumber, peeled, seeded and chopped
- 1 cup watercress, trimmed and chopped

In a medium saucepan, combine quinoa and water and bring to a boil. Simmer over low heat, stirring often, until tender, about 12 minutes. Drain and cool completely.

In a small bowl, combine kumquats, cilantro, olive oil, lemon juice, and salt. Allow to steep for 5 minutes.

In a large bowl, combine the cooled quinoa, pear, and cucumber.

Add the dressing and toss well.

Add the watercress and toss again. Serve.
