Wine Simmered Pork Chops with Walnuts

- 1 count medium onion, thinly sliced
- 2 count cloves garlic, minced
- 0.3 cup fresh parsley, finely chopped, divided
- 4 count center-cut loin pork chops (about 2 lbs total), trimmed
- 0.5 tsp freshly ground black pepper
- 2 tbsp all-purpose flour
- 0.3 cup dry red wine or beef broth
- 0.5 cup walnuts, coarsely chopped
- 0.5 tsp salt

Combine the sliced onion, garlic, and 3 tablespoons of the parsley in the bottom of the slow cooker.

Sprinkle the pork chops with pepper and dust lightly with flour. Arrange over the onion mixture, overlapping slightly if necessary.

Pour the red wine over the chops.

Cover and cook on LOW until pork is very tender when pierced, 7 to 8 hours.

About 10 minutes before serving, spread walnuts in a shallow baking pan and toast in a 350 degree F oven until golden, 8 to 10 minutes.

Lift the pork chops to a warm platter. Skim fat from the onion mixture in the cooker, season with salt to taste, and spoon over the chops.

Sprinkle with the toasted walnuts and the remaining tablespoon of parsley. Serve immediately.
