Whole Roasted Rib-Eye Roll

- 6 lb bone-in rib-eye roast
- 1 tsp salt
- 1 tsp freshly cracked black pepper
- 2 cup olive oil
- 2 whole jalapeno peppers, minced
- 2 medium onions, minced
- 0.3 cup chopped garlic
- 0.5 cup finely chopped fresh cilantro

Season the roast generously with salt and pepper.

In a large bowl, whisk together olive oil, minced jalapenos, onions, garlic, and cilantro. Season the marinade with salt and pepper.

Place roast bone-side up in a large roasting pan. Pour marinade over the entire roast. Refrigerate overnight.

Remove roast from refrigerator and pour off the marinade. Bring roast to room temperature.

Preheat oven to 400°F. Place pan in oven and roast 30 minutes.

Reduce oven temperature to 325°F and continue roasting about 2 hours for medium-rare.

Remove from oven and allow to rest 10 minutes before slicing. Slice into individual steaks and serve.
