Whole Roasted Rib-Eye Roast

- 6 lb bone-in rib-eye roast
- 1 tsp salt
- 1 tsp freshly cracked black pepper
- 0.5 cup olive oil
- 2 whole jalapeño peppers, minced
- 0.3 cup garlic, chopped
- 0.5 cup fresh cilantro, finely chopped

Season the roast all over with salt and cracked black pepper.

In a large mixing bowl, whisk together the olive oil, jalapeños, garlic, and cilantro. Season with salt and pepper.

Place the roast bone-side up in a large roasting pan. Pour the marinade over the roast, coating it completely. Refrigerate overnight.

Remove the roast from the refrigerator and pour off the marinade.

Preheat the oven to 400°F. Place the roasting pan in the oven and roast for 30 minutes.

Turn the oven down to 325°F and continue roasting for about 2 hours for medium-rare.
