Ground beef with kidney beans, rice, tomatoes, and chili powder baked until tender, finished with olives and Cheddar.

- 1 lb ground beef
- 1 tbsp vegetable oil
- 1 clove garlic, minced
- 1 tsp salt
- 1 whole large onion, chopped
- 1 whole green bell pepper, chopped
- 1 tsp chili powder
- 1 can (14.5 oz) canned tomatoes
- 1 can (15 oz) kidney beans, undrained
- 0.8 cup uncooked rice
- 0.3 cup chopped ripe olives
- 0.8 cup Cheddar cheese, grated

Brown ground meat in oil until crumbly. Add garlic, salt, onion, green bell pepper, and chili powder. Sauté for 5 minutes until vegetables are limp.

Mix in canned tomatoes, kidney beans (with liquid), and rice. Add a little water or tomato juice if needed.

Turn into a greased 2-quart casserole. Bake covered at 350°F for 45 minutes.

Sprinkle with olives and cheese. Uncover and bake 15 minutes longer until cheese is melted. Serves 8.
