Wendy's Mandarin Chicken Salad

- 0.5 cup corn syrup
- 3 tbsp white distilled vinegar
- 2 tbsp pineapple juice
- 4 tsp granulated sugar
- 1 tbsp light brown sugar
- 1 tbsp rice wine vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 0.3 tsp ground mustard
- 0.5 cup vegetable oil
- 0.5 tsp sesame seeds
- 4 piece chicken breast fillets
- 1 large head iceberg lettuce, chopped
- 1 small head red leaf lettuce, chopped
- 1 can mandarin oranges, drained
- 0.5 cup rice noodles or chow mein noodles
- 0.3 cup toasted slivered almonds

Make sesame dressing: combine all dressing ingredients (corn syrup through sesame seeds) in a blender. Blend until smooth. Refrigerate until needed.

Grill or pan-cook chicken breast fillets until cooked through. Dice and chill.

In 4 large salad bowls, layer iceberg lettuce, red leaf lettuce, diced chicken, mandarin oranges, rice noodles, and almonds.

Serve with prepared sesame dressing poured over the top.
