- 1 lb ground chuck
- 15 oz canned diced tomatoes with liquid
- 15 oz canned red kidney beans, drained
- 15 oz canned pinto beans, drained
- 8 oz tomato sauce
- 0.5 whole medium white onion, diced
- 4 oz canned diced green chiles with liquid
- 2 tbsp chopped celery
- 2 tbsp chili powder
- 0.5 tbsp ground cumin
- 1 tsp salt
- 1 cup water

Brown ground chuck over medium heat, breaking into small pieces with a spatula. Season with salt and pepper.

Drain the cooked meat in a strainer and rinse briefly under hot water to remove excess fat.

Transfer beef into a Dutch oven and add all remaining ingredients. Stir to combine thoroughly.

Over medium heat, bring to a simmer. Reduce to low and continue simmering 50 to 60 minutes, stirring occasionally.

Taste and adjust seasoning. Serve with shredded cheddar, sour cream, and crackers.
