  • 1 lb ground chuck
  • 15 oz canned diced tomatoes with liquid
  • 15 oz canned red kidney beans, drained
  • 15 oz canned pinto beans, drained
  • 8 oz tomato sauce
  • 0.5 whole medium white onion, diced
  • 4 oz canned diced green chiles with liquid
  • 2 tbsp chopped celery
  • 2 tbsp chili powder
  • 0.5 tbsp ground cumin
  • 1 tsp salt
  • 1 cup water

    Brown ground chuck over medium heat, breaking into small pieces with a spatula. Season with salt and pepper.

    Drain the cooked meat in a strainer and rinse briefly under hot water to remove excess fat.

    Transfer beef into a Dutch oven and add all remaining ingredients. Stir to combine thoroughly.

    Over medium heat, bring to a simmer. Reduce to low and continue simmering 50 to 60 minutes, stirring occasionally.

    Taste and adjust seasoning. Serve with shredded cheddar, sour cream, and crackers.
