Wendy's Chicken Caesar Fresh Stuffed Pita

Copycat Wendy's fresh stuffed pita — grilled chicken with romaine, red cabbage, and carrot in a homemade Romano-Parmesan Caesar dressing, stuffed in pita bread.

  • 2 whole boneless skinless chicken breasts
  • 6 cup romaine lettuce, chopped
  • 0.3 cup red cabbage, shredded
  • 0.3 cup carrot, shredded
  • 4 whole pita breads
  • 4 tsp Parmesan cheese, shredded
  • 0.5 cup water
  • 0.3 cup white vinegar
  • 0.5 cup olive oil
  • 1 tbsp Romano cheese, grated
  • 1 tbsp Parmesan cheese, grated

Instructions

    Make dressing: dissolve unflavored gelatin in water. Add white vinegar, olive oil, minced red bell pepper, salt, garlic powder, Worcestershire sauce, pepper, herbs, Romano, and Parmesan. Add egg substitute and mix well. Refrigerate until set.

    Season chicken breasts with salt and pepper. Grill until cooked through. Cool and slice.

    Toss romaine, red cabbage, and shredded carrot with the Caesar dressing.

    Stuff pita breads with dressed salad mixture and sliced grilled chicken.
