Weinkraut (Baked Sauerkraut with Apples)

  • 1 quart sauerkraut
  • 0.3 each c sliced onion
  • 2 each Tbsp. butter or bacon drippings
  • 2 each or 3 medium-size apples
  • 0 each c white wine
  • 0.5 each c beef stock or bouillon
  • 1 each tsp. brown sugar
  • 1 each tsp. celery seeds

Instructions

    Drain kraut slightly.

    Cook onion in butter or drippings until transparent.

  3. 3

    Add sauerkraut and stir; cook slowly.

  4. 4

    Wash, peel, and core apples; dice fruit and add to sauerkraut.

  5. 5

    Add wine and enough stock or bouillon to cover.

  6. 6

    Cook slowly, uncovered, for 30 minutes.

  7. 7

    Add sugar and celery seeds; cover and finish cooking in moderate 325° oven 30 minutes longer.
