- 4 cup sweet onions, thinly sliced
- 4 tbsp butter
- 4 cup chicken broth
- 1 chicken bouillon cube
- 0.5 tsp salt
- 0.3 tsp black pepper
- 2 tbsp butter (for white sauce)
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 0.5 lb Velveeta cheese, cubed
- 0.5 cup shredded Cheddar cheese (for garnish)

Melt 4 tbsp butter in a large pot over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, 20–25 minutes until deeply golden and caramelized.

Add chicken broth, bouillon cube, salt, and pepper. Bring to a simmer and cook 10 minutes.

Meanwhile, make white sauce: melt 2 tbsp butter in a small saucepan over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in milk until smooth. Cook 3–4 minutes until thickened.

Stir white sauce into the soup pot.

Add Velveeta cubes and stir over medium-low heat until completely melted and smooth.

Simmer 5 minutes more, stirring often.

Ladle into bowls and garnish with shredded Cheddar.
