Vinegar Pie

- 1 cup of water
- 2 eggs
- 2 tbsp of vinegar
- 1 cup of sugar
- 2 tbsp of flour
- 1 tbsp of butter
- 0.5 tsp of lemon extract
- 1 9-inch baked piecrust
Instructions

Mix together the sugar, water, eggs, vinegar, and the flour in the top of a double boiler. Cook, stirring constantly until the mixture is smooth and thick. Remove the mixture from the heat and stir in the lemon extract and the butter. Pour into the baked piecrust and let cool. Top with whipped cream if you like. ____________________
