Vidalia Onion Casserole

Sweet Vidalia onions sautéed with butter and baked with rice, Swiss cheese, and half-and-half.

  • 3 lb Vidalia onions, thinly sliced
  • 0.5 cup butter
  • 1 cup uncooked rice
  • 2 cup water
  • 1 0.5 cup Swiss cheese, shredded
  • 1 0.5 cup half-and-half

Instructions

    Preheat oven to 325°F.

    Sauté the onions in butter in a large skillet until soft, about 10 minutes.

    Boil the rice in 2 cups water for 5 minutes. Drain well.

    Place the onions, rice, cheese, and half-and-half in a greased baking dish.

    Bake uncovered for 1 hour.
