Vidalia Onion Casserole
Sweet Vidalia onions sautéed with butter and baked with rice, Swiss cheese, and half-and-half.

- 3 lb Vidalia onions, thinly sliced
- 0.5 cup butter
- 1 cup uncooked rice
- 2 cup water
- 1 0.5 cup Swiss cheese, shredded
- 1 0.5 cup half-and-half

Preheat oven to 325°F.

Sauté the onions in butter in a large skillet until soft, about 10 minutes.

Boil the rice in 2 cups water for 5 minutes. Drain well.

Place the onions, rice, cheese, and half-and-half in a greased baking dish.
