Venison Sausage Salad

Elegant game salad — house-made venison sausage with cranberries and walnuts, served over field greens with hoisin-sesame vinaigrette and goat cheese.

  • 1 lb venison scraps, trimmed
  • 2 oz heavy cream
  • 0.3 cup walnuts, chopped
  • 0.5 cup whole cranberries
  • 1/8 cup rice wine vinegar
  • 1 tsp sesame oil
  • 0.3 cup sugar
  • 0.3 cup hoisin sauce
  • 0.3 cup olive oil
  • 6 cup mixed field greens
  • 0.3 cup goat cheese, crumbled
  • 0.3 cup walnuts, toasted

Instructions

    Coarsely chop venison in a food processor. With machine running, add cream, salt, pepper, then walnuts and cranberries until just combined.

    Shape mixture into 1 sausage link; wrap tightly in plastic wrap. Simmer in venison stock or water until cooked through (about 15 minutes).

    Make dressing: whisk together rice wine vinegar, sesame oil, sugar, hoisin sauce, and olive oil.

    Arrange field greens on plates. Slice sausage and place on greens.

    Drizzle with hoisin-sesame dressing. Garnish with crumbled goat cheese and toasted walnuts.
