Creamy Velveeta Macaroni and Cheese

  • 3 cup dry spiral pasta (rotini or fusilli)
  • 0.7 cup whole or 2% milk
  • 1 lb Velveeta cheese, cubed small
  • 0.3 tsp dry mustard powder
  • 0.5 tsp ground turmeric
  • 0.5 tsp salt
  • 0.3 tsp black pepper

Instructions

    Cook pasta in boiling salted water until al dente. Drain and set aside.

    In the top of a double boiler over gently simmering water, combine milk, Velveeta cubes, mustard powder, turmeric, salt, and pepper.

    Stir occasionally with a whisk until completely melted and smooth, about 8–10 minutes.

    Fold pasta into the hot cheese sauce until well coated.

    Keep warm over hot water for up to 1 hour, thinning with a splash of milk if needed. Serve immediately.
