Vegetarian Gumbo
A hearty slow cooker vegetable gumbo with okra, corn, tomatoes, lima beans, green pepper, and aromatic allspice — a simple vegan comfort meal.

- 1 onion, chopped
- 3 whole cloves
- 1 green bell pepper, diced
- 2 cup tomatoes, diced
- 4 cup vegetable stock
- 1 cup cooked lima beans
- 1 cup fresh or frozen corn kernels
- 1 0.5 cup okra, sliced
- 1 tsp salt
- 0.3 tsp allspice
Instructions

Sauté onion and green pepper with cloves in a small amount of water until soft. Remove cloves.

Add all ingredients to slow cooker.

Cook on HIGH 6 hours or LOW 8–10 hours.
