- 0.3 cup olive oil
- 3 clove garlic, minced
- 2 medium zucchini, chopped
- 1 small onion, chopped
- 0.3 cup parsley, chopped
- 2 cans whole, peeled tomatoes, 28-oz.
- 0.3 cup fresh basil, chopped

Salt and pepper In a large saucepan, heat olive oil. Add garlic, onion, and zucchini. Cook, stirring, for about 5 minutes. Add parsley, tomatoes, basil, salt, and pepper.
