Unstuffed Cabbage Casserole

- 1 lb lean ground beef
- 1 count medium onion, coarsely chopped
- 8 cup cabbage, cored and cut into 1-inch strips
- 0.3 cup water
- 28 oz canned crushed tomatoes
- 1 tbsp brown sugar
- 1 tbsp white vinegar
- 0.5 tsp salt
- 1 0.5 tsp caraway seeds
- 1 count clove garlic, finely minced
- 0.3 tsp freshly ground pepper

In a 6-quart Dutch oven or large pot, brown the ground beef over medium-high heat, draining off most of the fat.

Add the chopped onion and cook until onion softens, about 3 to 5 minutes.

Add the chopped cabbage and water to the pot and cook until cabbage begins to wilt, 5 to 8 minutes.

Stir in crushed tomatoes, brown sugar, vinegar, salt, pepper, caraway seeds, and garlic. Mix well.

Bring to a boil, then reduce heat to a simmer. Cover and simmer until cabbage is tender, about 30 minutes.

Serve over white rice or with rice on the side.
