Ukrainian Sweet and Sour Bean and Cabbage Soup

A traditional Ukrainian sweet and sour soup with turkey stock, sauerkraut, fresh cabbage, carrots, white beans, and tomato paste — wonderful with black bread.

  • 2 whole turkey legs
  • 3 whole medium onions, chopped
  • 1 lb sauerkraut, rinsed several times
  • 1 whole head cabbage, chopped
  • 3 whole carrots, shredded
  • 1 can small tomato paste
  • 15 oz canned great northern beans (undrained)
  • 0 to taste salt and pepper

Instructions

    Make the stock: place turkey legs and onions in a large pot, cover with water, and boil for several hours. Remove meat and bones; shred any worthwhile meat and set aside.

    Add sauerkraut to the stock. Cook covered for 45 minutes.

    Add shredded carrots; cook 10 minutes.

    Add fresh cabbage; cook 15 minutes until tender.

    Stir in tomato paste until dissolved, then bring back to a boil for 2 minutes.

    Add beans (undrained) and return to boil. Cover and let rest for about an hour for flavors to meld. Add reserved turkey meat.

    Season with salt and pepper. If more liquid is needed, add water or tomato juice.

    Serve with black bread and butter.
