Twice Baked Potatoes

Baked potato shells filled with creamy mashed potato, sour cream, cheddar, green onions, and bacon, then baked again until golden.

  • 4 whole large baking potatoes
  • 8 slice bacon
  • 1 cup sour cream
  • 0.5 cup milk
  • 4 tbsp butter
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 cup shredded Cheddar cheese, divided
  • 8 whole green onions, sliced, divided

    Preheat oven to 350°F. Bake potatoes for 1 hour.

    Meanwhile, cook bacon in a skillet over medium-high heat until evenly brown. Drain, crumble, and set aside.

    Allow potatoes to cool 10 minutes. Slice in half lengthwise and scoop flesh into a large bowl; save skins.

    Add sour cream, milk, butter, salt, pepper, 1/2 cup cheese, and half the green onions to the potato flesh. Mix with a hand mixer until creamy.

    Spoon mixture into potato skins. Top each with remaining cheese, green onions, and bacon. Bake for another 15 minutes.
