Tuxedo Cheesecake

Elegant white chocolate cheesecake on a chocolate cookie crust, topped with dark chocolate curls for a black-and-white tuxedo effect.

  • 1 0.8 cup crushed creme-filled chocolate cookies (about 18)
  • 2 tbsp butter or margarine, melted
  • 1 cup white chocolate chips
  • 24 oz cream cheese (3 packages), softened
  • 0.8 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 whole large eggs
  • 2 oz semi-sweet chocolate, grated or made into curls

Instructions

    Preheat oven to 350°F. Toss cookie crumbs and butter; press onto bottom of ungreased 9-inch springform pan. Bake 10 minutes.

    Microwave white chocolate chips on medium-high (70%) for 1 minute; stir. Continue at 10-20 second intervals until smooth. Cool to room temperature.

    Beat cream cheese, sugar, and vanilla until smooth. Beat in eggs; gradually beat in melted white chocolate.

    Spread over chocolate crust. Bake 40-50 minutes until edges are set but center still moves slightly.

    Cool on wire rack; refrigerate until firm. Remove springform sides. Sprinkle grated chocolate or chocolate curls over cheesecake before serving.
