Turnip Casserole

Tender turnips layered with a savory cheese sauce made with sautéed onion, bell pepper, and celery.

  • 1 0.5 lb turnips, peeled and thinly sliced
  • 2 tbsp butter
  • 1 whole onion, thinly sliced
  • 2/3 cup chopped green bell pepper
  • 1/3 cup chopped celery
  • 2 tbsp flour
  • 1 cup milk
  • 0.5 cup sharp cheese, grated
  • 1 tsp salt, to taste
  • 0.5 tsp pepper, to taste
  • 3 tbsp bread crumbs

Instructions

    Cook turnips in boiling salted water until just tender. Drain.

    Sauté onion, green pepper, and celery in butter until tender. Sprinkle with flour and cook 1 minute.

    Add milk and stir until thickened. Stir in cheese, salt, and pepper.

    Combine cheese sauce with cooked turnips and place in a baking dish. Top with bread crumbs.

    Brown under the broiler. May be prepared ahead and run under broiler just before serving. Serves 4.
