- olive oil
- French bread
- 0.5 cup pesto sauce
- mozzarella cheese
- chopped leftover turkey
- 1 Roma tomato, thinly sliced
- 1 avocado, halved, seeded, peeled and sliced

Preheat griddle to medium-high heat. Brush each slice of bread with olive oil on one side. Place 2 slices olive oil side down on the griddle. Spread 2 tablespoons pesto over 1 side of French bread.

Top with one slice mozzarella, turkey, tomatoes, avocado, a second slice of mozzarella, and top with second half of bread to make a sandwich; repeat with remaining slices of bread. Cook until the bread is golden and the cheese is melted, about 2-3 minutes per side. Servings warm with your favorite salad or soup.
