Turkey in a Bread Basket

  • 8 oz fresh broccoli
  • 1 whole medium onion, sliced thin
  • 4 oz fresh mushrooms, sliced
  • 2 tbsp butter or margarine
  • 2 tbsp all-purpose flour
  • 0.5 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp ground sage
  • 1 cup milk
  • 2 0.5 cup cooked turkey, cut up
  • 4 slice bacon, crisply fried and crumbled
  • 1 loaf (1.5 lbs) unsliced sandwich bread
  • 0.5 cup butter or margarine, melted
  • 1 clove garlic, crushed

    Make bread basket: Remove crust and cut inside from bread, leaving a ½-inch base and walls. Mix melted butter and garlic; brush all over bread. Bake on a rack at 325°F for 25 to 30 minutes until golden and crisp.

    Steam broccoli stalks 5 minutes, then add florets and steam another 5 minutes until crisp-tender.

    Cook onion and mushrooms in margarine until tender, about 5 minutes. Blend in flour, salt, pepper, and sage. Cook until bubbly; add milk and stir until boiling and thickened.

    Stir in turkey, broccoli, and bacon. Heat 5 minutes.

    Spoon turkey mixture into the bread basket and serve immediately.
