Turkey and Cheddar Casserole

  • 3 cup cooked turkey, cut into 1-inch cubes
  • 0.8 cup chopped celery
  • 5 oz sliced water chestnuts, drained
  • 0.5 cup chopped red bell pepper
  • 0.7 cup mayonnaise
  • 1 tbsp grated onion
  • 2 tbsp lemon juice
  • 1 0.5 cup shredded sharp Cheddar, divided
  • 0.8 cup shredded mozzarella, divided
  • 1 cup cornflakes, crushed

Instructions

    Preheat oven to 350°F (175°C). Lightly butter a 9×13-inch baking dish.

    In a large bowl, combine turkey, celery, water chestnuts, red bell pepper, mayonnaise, onion, lemon juice, 1 cup Cheddar, and ½ cup mozzarella. Mix well.

    Transfer mixture to prepared baking dish. Bake 25–30 minutes until heated through.

    In a bowl, mix remaining ½ cup Cheddar, ¼ cup mozzarella, and crushed cornflakes.

    Sprinkle cheese-cornflake topping over casserole and bake 5–8 minutes more until cheese melts and topping is golden.
