Cook pasta according to packet directions. Place the butter in a medium sized microwave bowl and microwave on high (750 watt oven) for 30 seconds until melted. Stir in the flourand add the milk, whisking gently. Microwave again on high for 3 to 4 minutes, whisking gently several times during the cooking process. Let stand in the warm microwave for another minute, then whisk in the mustard and fold in the 4 oz of grated cheese. Drain the pasta well and place in a medium sized ovenproof dish. Add the drained tuna, mixing it in with the pasta. Pour the cheese sauce over and mix with a spoon. Lay the thinly sliced tomatoes over the top, and sprinkle on the remaining grated cheese.Bake in a medium oven for about 30 minutes or until the cheese topping is bubbly and beginning to brown. Do not overcook or the pasta will become hard on top. This one-dish mean can be served with salad and garlic bread. Covered, it keeps well in the refrigerator for 24 hours, and can be quickly heated up the day after preparation for a meal when you've got better things to do than cook!
