Triple Cheesy Chicken Casserole

  • 2 tbsp butter or margarine
  • 1 small onion, chopped
  • 0.5 cup green bell pepper, chopped
  • 10 0.8 oz can cream of chicken soup
  • 8 oz can sliced mushrooms, drained
  • 2 oz jar chopped pimentos, drained
  • 0.5 tsp dried basil
  • 8 oz egg noodles, cooked and drained
  • 3 0.5 cup cooked chicken, diced
  • 2 cup shredded Cheddar cheese
  • 2 cup cottage cheese
  • 0.5 cup grated Parmesan cheese

Instructions

    Preheat oven to 350°F. Grease a 9 x 13-inch baking dish.

    In a skillet, sauté the onion and green pepper in butter until tender. Remove from heat.

    Stir in the cream of chicken soup, mushrooms, pimentos, and basil. Set aside.

    In a large bowl, mix together the cooked egg noodles, diced chicken, Cheddar cheese, cottage cheese, and Parmesan cheese.

    Pour the soup mixture over the noodle mixture and stir until well combined.

    Pour everything into the prepared baking dish. Bake uncovered at 350°F for 45 minutes or until bubbly.

    If desired, sprinkle with dry bread crumbs and bake 10 minutes longer for a crispy top.
