TORTILLA QUICHE

  • 1 each (12-inch) flour tortilla
  • 0 each C. grated Monterey Jack cheese
  • 1 each C. grated sharp Cheddar cheese
  • 1 each (4 oz.) can chopped green chiles
  • 3 each eggs
  • 1 each C. sour cream
  • 0.3 each tsp. salt
  • 1/8 each tsp. cumin

Instructions

    Preheat oven to 350ºF.

    Place tortilla in bottom of a lightly greased 10-inch pie plate.

    Sprinkle Jack cheese and half of Cheddar cheese over tortilla.

    Sprinkle chiles over cheese.

  5. 5

    Beat eggs, sour cream, salt and cumin.

    Pour over chiles and top with the remaining Cheddar cheese.

    Bake for 45 minutes.

    Let sit 10 minutes before cutting.

    Makes 6 servings.
