Tortellini Salad

- 16 oz cheese-filled tortellini
- 1 large green bell pepper, thinly sliced
- 1 large red bell pepper, julienned
- 1 small red onion, julienned
- 0.5 cup sliced black olives
- 0.5 cup crumbled feta cheese
- 1 piece boneless chicken breast, cooked and sliced
- 0.3 cup olive oil
- 2 tsp minced lemon zest
- 0.3 cup lemon juice
- 2 tbsp ground walnuts
- 1 tbsp honey

Cook tortellini in a large pot of boiling salted water until al dente. Drain, cool under cold water, and refrigerate until chilled.

Prepare dressing by whisking together olive oil, lemon zest, lemon juice, ground walnuts, and honey. Refrigerate until chilled.

In a large salad bowl, combine chilled tortellini, bell peppers, red onion, olives, and sliced chicken.

Add the lemon dressing and feta cheese. Toss and serve.
