Tomato Potato Skins

  • 8 each baking potatoes
  • 2 each tomatoes, finely chopped
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • 4 each green onions, chopped
  • 1 each tsp. olive oil
  • 2 each tsp. cayenne pepper
  • 1 each tsp. salt
  • 1 each tsp. onion powder
  • 1 each tsp. chili powder
  • 1 each 16 oz. sour cream
  • 1 each . Microwave potatoes for 3 minutes each, which should be 24 minutes.
  • 2 each . Cut potatoes in half lengthwise. Scoop out potato middles.
  • 3 each . In medium bowl combine potato middles with tomatoes, mozzarella, cheddar, onions,
