Tomato Bruschetta

  • 1 loaf Italian bread, halved lengthwise then cut diagonally into 1-inch slices
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • 2 large tomatoes, peeled, seeded and chopped
  • 0.3 tsp salt
  • 0.3 tsp black pepper
  • 0.5 cup fresh basil, chopped

Instructions

    Toast bread slices under the broiler until lightly browned on both sides.

    Combine the minced garlic and olive oil, then brush over one side of each bread slice.

    Spread the chopped tomatoes evenly over the bread. Sprinkle with salt and pepper.

    Broil for about 30 seconds to heat the tomatoes through.

    Remove from oven, sprinkle generously with fresh basil, and serve immediately.
