Thumbelina Cookies
A Carolina mountain recipe for Thumbelina Cookies.
Ingredients
- 1 0.5 cup of confectioner’s sugar
- 1 cup of butter, softened
- 1 egg
- 1 tsp of vanilla
- 1 tsp of almond extract
- 3 cup of flour
- 1 tsp of baking soda
- 1 tsp of cream of tartar

Frosting: 3 cups of confectioner’s sugar 6 tablespoons of butter, softened 4 tablespoons of evaporated milk 1/2 teaspoon of vanilla Mix 1 1/2 cups of the confectioners sugar, the butter, egg, vanilla, almond extract, flour, bak- ing soda, and the cream of tartar. Roll into 3/4-inch balls. Place the balls of dough onto an ungreased cookie sheet and press down the center. Bake at 350 degrees for 3 minutes and then press the centers down again and bake for an additional 5 minutes. Place the cookies on a rack to cool.
