Thai Hot and Sour Soup

A Thai-restaurant inspired hot and sour soup with lemongrass chicken broth and just-cooked chicken, vegetables, and snow peas.

  • 6 cup chicken broth (1 to 2 quarts)
  • 2 stalks fresh lemongrass
  • 1 tbsp Louisiana hot sauce (to taste)
  • 2 breasts chicken breast, julienned
  • 1 cup snow peas, sliced
  • 1 cup mushrooms, sliced
  • 3 whole scallions, sliced into 1/4-inch pieces (white and green parts)

Instructions

    Bring chicken broth to a boil in a large pot.

    When it boils, turn off the heat. Add lemongrass and hot sauce to taste. Let steep.

    Meanwhile, julienne the chicken breast. Slice scallions, snow peas, and mushrooms.

    Strain the broth to remove lemongrass. Return strained broth to pot and bring back to a boil.

    Turn off the heat again. Add the chicken, snow peas, mushrooms, and scallions.

    Let sit for 1 minute — the residual heat cooks everything perfectly. Serve immediately.
