TGI Friday's Jack Daniel's Grilled Chicken

  • 1 head garlic
  • 1 tbsp olive oil
  • 0.7 cup water
  • 1 cup pineapple juice
  • 0.3 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 0.3 cup dark brown sugar
  • 3 tbsp lemon juice
  • 3 tbsp minced white onion
  • 1 tbsp Jack Daniel's whiskey
  • 0.3 tsp cayenne pepper
  • 4 whole boneless skinless chicken breasts

Instructions

    Preheat oven to 325°F. Cut ½ inch off top of garlic head, drizzle with olive oil, cover with foil, and roast 1 hour.

    Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a saucepan over medium-high heat.

    Stir until mixture boils, then reduce heat to medium-low and simmer 40 minutes until sauce reduces by half.

    Squeeze roasted garlic into the sauce. Add lemon juice, onion, Jack Daniel's, and cayenne. Simmer 15 more minutes.

    Grill chicken breasts over medium heat, basting with Jack Daniel's glaze during the last few minutes.

    Serve with additional glaze on the side.
