Tarte Au Fromage Blanc

  • 6 fresh plums, halved and pitted
  • 0.5 cup brandy
  • 0.5 lb fresh fromage blanc or cream cheese
  • 0.5 cup granulated sugar
  • 1 egg yolk
  • 2 tbsp heavy cream
  • 1 tbsp all-purpose flour
  • 0.5 tbsp fresh lemon juice
  • 0.5 tsp pure vanilla extract
  • 1 unbaked 10-inch tart pastry shell
  • 0.5 cup sweetened whipped cream
  • 4 fresh mint sprigs, for garnish

Instructions

    Slice the plums in half. Place in a shallow dish, pour the brandy over, cover, and refrigerate for 2 hours.

    Preheat the oven to 350°F (175°C). In a food processor, process the fromage blanc until smooth. Add the sugar and process until incorporated. With the machine running, add the egg yolk. Add the cream, flour, lemon juice, and vanilla; process until smooth.

    Arrange the macerated plum halves cut-side down over the unbaked pastry shell.

    Pour the cheese mixture over the plums and spread evenly.

    Bake on the bottom oven shelf until the tart is set, about 40 minutes. If the top starts to brown, tent with foil. Cool completely. Slice and serve with sweetened whipped cream and a mint sprig.
