Tangy Spinach Salad

  • 0.5 lb fresh spinach leaves, washed
  • 3 cup sliced fresh mushrooms
  • 6 slice bacon
  • 2 tbsp brown sugar
  • 2 tbsp Dijon-style mustard
  • 3 tbsp lemon juice

Instructions

    Remove and discard stems from spinach. Tear leaves into bite-size pieces and place in a bowl.

    Add mushroom slices to spinach.

    Cook bacon until crisp; remove from pan.

    To the bacon drippings in the pan, add brown sugar, mustard, and lemon juice. Cook for 1 minute, then remove from heat.

    Crumble bacon and distribute over the salad.

    Pour hot dressing over the salad, toss, and serve immediately.
