  • 1 tbsp olive oil
  • 1 cup red and green bell peppers, chopped
  • 1 cup zucchini or yellow squash, chopped
  • 2 0.3 cup Bloody Mary mix or vegetable juice
  • 1 cup bulgur wheat
  • 1 tbsp lemon juice
  • 1 tsp dried basil
  • 0.3 cup green onions, chopped

Instructions

    Toss all ingredients except basil and green onions in the crockpot.

    Cook on LOW for 8 hours.

    Add basil in the last 30 minutes of cooking.

    Garnish with green onions just before serving.
