Tamale Pollo Casserole

  • 1 cup corn chips, finely crushed
  • 15 oz can tamales
  • 10 oz can chili with no beans
  • 1 0.5 cup cooked chicken, chopped
  • 15 0.3 oz can whole kernel corn, undrained
  • 4 oz can chopped green chiles, drained
  • 1 cup shredded Cheddar cheese

Instructions

    Preheat oven to 350°F.

    Sprinkle the crushed corn chips evenly over the bottom of an 8-inch square baking dish.

    Unwrap the tamales and arrange them over the corn chips.

    In a bowl, combine the chili, chopped chicken, corn (with liquid), and green chiles. Mix well.

    Spoon the chicken mixture evenly over the tamales.

    Bake at 350°F for 20 minutes.

    Sprinkle the shredded Cheddar cheese over the top and continue baking about 5 more minutes until the cheese is melted.

    Serve with a dollop of sour cream.
