  • 2 lb ground beef
  • 12 oz canned chopped tomatoes
  • 1 whole onion, chopped
  • 1 clove garlic, chopped
  • 0.5 tsp salt
  • 0.5 tsp oregano
  • 7 oz canned chopped green chiles, divided
  • 1 cup grated mild cheddar cheese
  • 0.5 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 cup milk

    Preheat oven to 375°F.

    Brown meat in skillet. Add tomatoes, onion, garlic, salt, oregano, and half of the green chiles. Simmer 20 minutes.

    Pour meat mixture into a 4-quart casserole dish. Top with grated cheddar cheese.

    For the cornbread topping: mix cornmeal, flour, baking powder, a dash of salt, 2 tsp oil, 2 tsp sugar, milk, and remaining green chiles together.

    Pour cornbread topping over the meat and cheese.

    Bake at 375°F for 30 minutes or until topping is done.
